Nicola’s Cold Summer Tomato Soup

Serve on a very hot day.

This is a super easy, fabulous soup to have at lunch or dinner with a basket of warm, toasted pita bread set right in the middle of the table. Have some earthy salads like Tabouli, a Mediterranean Orzo Salad and dips such as Taramasalata or an Eggplant & Tahini Spread. With a bottle of crisp white wine or a lovely Pino Noir and good company, this might be the best meal of your summer.
